Antoine Foucault, son and nephew of famed (former) Clos Rougeard owners, established Domaine du Collier alongside Caroline Boireau 20 years ago, farming 6.5 hectares of vines organically and biodynamically. Fruit is hand-harvested and fermented with native yeast. The 2012 Saumur Blanc is zesty and bright, showing a pure, terroir-driven expression of the appellation’s Chenin; flinty, and refreshing, with lightning-like acidity and firm structure.
