After his death in 2016, Stéphane Moreau’s vision is continued on by his assistant winemaker and wife, producing lifted, Dauvissat-style wines amongst the new generation of Chablis producers. Extensive sur-lie aging and healthy fruit create vivacious wines, full of saline-tinged harmony. Fruit for the 2015 ‘Montmains’ comes from a small, .65 hectare plot of old vines, creating a concentrated, spicy palate of citrus, minerals, and salty almonds.
