Paul Nicolle Chablis 'Vieilles Vignes' 2015

Located in Fleys, just four short kilometers from the town of Chablis, Paul Nicolle’s domaine was founded in 1978. Fruit grows across 14 hectares of old vines, deeply rooted in Kimmeridgian limestone. ‘Vieilles Vignes’ shows a gorgeously floral tinged nose of crisp apple and stone fruit, with a racy palate oozing with chalky minerality. Vinified in stainless steel; aging for one to 1.5 years on the lees gives texture and complexity to the wine. A steal for the price.

Chablis, France

Considered part of Burgundy despite being about two hours northwest of the Côte d'Or, this is where the world’s steeliest, most mineral Chardonnay grows in limestone-rich soils.
